Altitudes and Aspects: South East; South West. From 200 to 280 meters above sea level
Soil: Deep, medium-textured, mainly clay, located on a hill
Vineyard: Sustainable management through natural methods of defense and organic fertilization, legume green manure and mechanical weeding
Training method: Single guyot
Grapes: Pecorino and Ribona
Harvesting: Hand harvesting starting from the second part of September ; use of small crates, selection of the bunches directly in the vineyard
Grape drying: Grapes are left to dry for a period of 35 – 45 days on layered straw mats in a naturally ventilated room
Winemaking: Manual pressing of the dried grapes. Cold must filtering. Alcoholic fermentation in small wood carats
Aging: Matured in small acacia barrels for 12 months before aging in bottles for other 12 months
Serving temperature: 16° C.
